Chia Pudding

Yields: 8-12

Ingredients

  • 1 Cup Chia Seeds
  • 6 Cups Water
  • 1 Cup Coconut Milk
  • 1/2 cup Unsweetened Dried Cranberries
  • 1/4 cup Unsalted Roasted cashew nut pieces
  • 1 tbsp Unsweetened coconut flakes
  • Pinch of Salt
  • 1 Cup Erythritol to taste
  • 1/2 cup Allulose to taste

Directions

  • Soak Chia Seeds in water for at least 4-6 hours.
  • Roast raw unsalted cashew pieces in a teaspoon of clarified butter or oil
  • Add all other ingredients, mix well and refrigerate for 4 hours before serving
