1 lb Spinach1 tsp Oil3/4 cup Bengal Gram dhal / Channa dhal beans skinless & split (Dark smaller version of garbanzo)1 teaspoon Urad dhal, Skinless Split Black Gram4 pods Garlic1 in Ginger1/2 tsp Mustard seeds1 large Red Oniona pinch Asafoetida / Hing1 tsp Turmeric powder1/2 tsp 12 Cumin seeds2 tbsp Grated coconut unsweetenedSalt to taste2 Red dry Serrano peppers (Optional)

Soak the Bengal Gram dhal for 15 mins and cook it. Keep it aside.Heat the pan with oil.Add mustard seeds let them pop. As soon as the popping begins, turn off the heat. (Burnt mustard seeds taste terrible!)Add Cumin seeds and let it cook for 30 seconds.Add Urad dhal, Red chillies, Asafoetida fry till brown color.Add crushed garlic, ginger and onion. Fry till transparent.Add spinach, salt and turmeric powder and let it cook.Add cooked Bengal gram dhal. Mix well. Cook for a 1 min.Add grated coconut and mix well.
