Spinach Stir Fry

Ingredients

  • 1 lb Spinach
  • 1 tsp Oil
  • 3/4 cup Bengal Gram dhal / Channa dhal beans skinless & split (Dark smaller version of garbanzo)
  • 1 teaspoon Urad dhal, Skinless Split Black Gram
  • 4 pods Garlic
  • 1 in Ginger
  • 1/2 tsp Mustard seeds
  • 1 large Red Onion
  • a pinch Asafoetida / Hing
  • 1 tsp Turmeric powder
  • 1/2 tsp 12 Cumin seeds
  • 2 tbsp Grated coconut unsweetened
  • Salt to taste
  • 2 Red dry Serrano peppers (Optional)

Directions

  • Soak the Bengal Gram dhal for 15 mins and cook it. Keep it aside.
  • Heat the pan with oil.
  • Add mustard seeds let them pop. As soon as the popping begins, turn off the heat. (Burnt mustard seeds taste terrible!)
  • Add Cumin seeds and let it cook for 30 seconds.
  • Add Urad dhal, Red chillies, Asafoetida fry till brown color.
  • Add crushed garlic, ginger and onion. Fry till transparent.
  • Add spinach, salt and turmeric powder and let it cook.
  • Add cooked Bengal gram dhal. Mix well. Cook for a 1 min.
  • Add grated coconut and mix well.
